Crunch Time: Exceedient’s Panko Earns Top Spot in Taste Test




At Exceedient Foods, innovation isn’t just a buzzword we toss around, it’s baked into everything we do. Recently, we partnered with the Food Innovation Center (FIC) at Oregon State University, a trusted, third-party research institution, for an exciting deep dive into objectively evaluating our rice panko breadcrumbs alongside a leading national brand.

We are never done delivering on exceptional quality and we wanted to put our panko to the test. We wanted an unbiased, scientific look at how our gluten-free panko stacks up across various cooking methods and applications. The results? They’re pretty delicious.

This wasn’t your average taste test. The team at OSU’s Food Innovation Center meticulously evaluated our products in a controlled environment, developing five different yet beloved dishes:

  • Fried fish 
  • Fried tofu
  • Mozzarella sticks
  • Chicken katsu
  • Panko crusted mac & cheese

We are always pushing for the best at Exceedient, which is why we specifically chose each dish to represent a variety of cooking methods and textures and the team at OSU was up to the challenge. Each panko variety was put through rigorous physical and sensory testing, measuring everything from coating uptake and visual appeal to mouth feel and of course— crispiness. It was a process designed to ensure every bite provided meaningful insights.

So, how did Exceedient’s panko breadcrumbs fare?
Pretty impressively, we’re proud to say:

  • Superior Coverage & Visual Appeal: Our panko showed exceptional coverage in tests, particularly on fried tofu, creating visually appealing, evenly coated products.
  • Balanced Crispiness: Exceedient’s Brown Panko’s particle size especially hit that sweet spot of crunchiness without crossing into abrasive territory.
  • Clean, Neutral Taste: Unlike some competitor pankos that left behind an oily mouthfeel and flavor, our panko kept things neutral, allowing the natural flavors of the food to shine through.
