A Fresh Approach to Traditional Favorites

Launched Monday, March 11, for Meatless Mondays, the menu features an array of delicious options sure to please vegans and omnivores alike. The new plant-based menu includes:

  • Tempting Tacos: Indulge in a trio of tacos with your choice of corn or flour tortillas. Among the offerings are the Al Pastor Tacos, boasting juicy julienne carrots and diced onions, doused in Cesar’s signature adobo sauce. Or try the Chipotle Cauliflower Tacos, featuring roasted cauliflower and chipotle pepper sauce, topped with creamy avocado.
  • Satisfying Entrees: For heartier fare, dive into the Creamy Poblanos, two fire-roasted poblano peppers stuffed with a medley of veggies and simmered in coconut milk. Or opt for the Mercado Bowl, a flavorful combination of black beans, rice, grilled avocado, and more.
  • Decadent Desserts: Round off your meal with Dessert Donas, made-to-order vegan beignets dusted with cinnamon sugar and served with raspberry and chocolate dipping sauces.

Vegan Options Rooted in Mexican Tradition

Chef Lulu Duran, the creative force behind the plant-based menu, drew inspiration from her family’s culinary heritage. Duran stated, “Playing with all the vegetables and giving them another life, other than just your basic stir fry, was a lot of fun. The inspiration for these dishes comes directly from some of our current dishes. For example, the Cauliflower Tacos are inspired by our Shrimp Tacos, which are super popular. At the end of the day, I always go back to the way my mom cooked. She made everything with gumption, and with the hope that the love she had for cooking for others, is projected in the dish. So every onion, pumpkin seed, and pepper, it all goes back to her and our Mexican roots.”
