I am so not a fan of these weeks just flying by. Who do they think they are? Don’t they know I have a lot of stuff to get done before the weekend starts? Ugh, rude.
Anyway. Last week, I felt the need to increase my time spent baking. Because I was never baking. So, I made this delightful little breakfast treat. Only I feel kinda bad for this recipe. The banana bread started out healthy. Something like 115 calories per slice. And then I added chocolate chips. Whoops. It’s probably because I was making it at the same time I was making the most amazing strawberry cake known to man. Actually, I blame my roommate, Shaylyn. She was the one with the brilliant idea to add chocolate chips.
She’s a genius.
I found the recipe for “Healthy Coconut Banana Bread” on FitSugar, and it seemed easy enough. Because old habits die-hard–or is it hardly die?– I did not follow the recipe exactly. So, below, you’ll find my version of this tasty treat. Enjoy!
Ingredients
- 1 ¾ cup all-purpose flour
- 1 teaspoon baking powder
- 1¼ teaspoon baking soda
- 3 large ripe bananas, mashed
- ½ cup sweetened flaked coconut + more for the top
- ½ tablespoon olive oil
- 1 teaspoon vanilla
- ½ cup of brown sugar
- 3 egg whites
- 2 tablespoons skim milk
- 1 5.3 oz. Oikos vanilla Greek yogurt cup
- ¼ cup orange juice
- about a half-bag of chocolate chips (we used semi-sweet), depending on how chocolatey you want it
Directions
- Preheat oven to 350 F.
- Mix flour, baking powder, baking soda together in mixing bowl. Set aside.
- In separate large mixing bowl combine mashed bananas, brown sugar, and vanilla. Add egg whites and mix together until smooth. Next add oil. Then, slowly add in flour and combine until moist. Next add Greek yogurt, orange juice, and milk. Lastly add ½ cup of coconut and chocolate chips, mix together.
- Pour into greased 8×8 inch pan. Sprinkle coconut on top to cover.
- Bake for 50-60 minutes or until toothpick comes out clean and the bread is golden brown.
Make 16 squares.
This banana bread turned out really, really yummy. Again, I gave it away to get it out of my kitchen so I wouldn’t devour the entire thing, and was told that the recipients were hard pressed to use their willpower.
The recipe on FitSugar also recommended throwing in some walnuts which I think would give it a bit more texture. I’ll definitely be trying that next time!

I love this recipe. It is not too sweet and is the first banana bread recipe I will bake again and again. I feel grateful to have had all the ingredients on hand, wow, when did that happen? Happy eating.
Oh, I omitted the orange juice and added a little more milk. Also, I added walnuts, yummy… made 5 mini loaves.
Thanks! I’m going to have to try it with walnuts or pecans in it. I was debating on making little muffins, but mini loaves sound great, too!
