Homemade Fried Chicken

- 1 gallon water
- 1 cup salt
- 2 3/4 cup all purpose flour
- 2 tablespoons sea salt
- 2 tablespoons fresh ground black pepper
- 1 cup of soy base oil or rice bran oil

Directions
To prepare brine:
Mix cold water and salt together. Place the 8 pieces of chicken in the brine and soak 30 minutes or overnight before cooking. To prepare fried chicken:
In a medium mixing bowl, combine flour, salt, and pepper together. In a cast iron skillet on medium heat, heat oil for about 5 minutes. Remove chicken from brine and place directly into seasoned flour and coat both sides of chicken. Gently place chicken into the hot oil in the cast-iron skillet and cover with a lid, adjusting temperature if needed. Let chicken cook with the lid on for 8 minutes, turn chicken over, and continue cooking for another 8 minutes with the lid on. Remove from pan once temperature of chicken has reached 165 degrees. Let rest for 5 minutes and serve.
