Ingredients

  • 1 tablespoon olive oil
  • 1 1/2 cups white beans, drained, drained
  • 1/2 cup sour cream
  • 4 ounces ounces cream cheese, softened, softened
  • 2 cloves cloves garlic, minced, minced
  • 1 tablespoon fresh lime juice
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon onion powder
  • 1/4 teaspoon kosher salt
  • 1 cup shredded cooked chicken breast
  • 1 cup canned corn
  • 1/4 cup diced green chiles
  • 1/2 cup diced red bell peppers, divided, divided
  • 2 tablespoons chopped chives, plus more for garnish, plus more for garnish
  • 1 cup shredded mozzarella, divided, divided
  • 1 cup shredded sharp white cheddar cheese, divided, divided
  • 1/3 cup salsa verde

Steps

  1. Preheat oven to 375°F.
  2. Grease a 10-inch cast-iron skillet with olive oil. Reserve 1/4 cup of the white beans and set aside.
