Everyone knows that breakfast is the most important meal of the day – it keeps us fueled for what’s ahead. Unfortunately, many of the breakfast foods that are quick and easy are also unhealthy.

Susan Marschke, Registered Dietitian at Park Nicollet in St. Louis Park, offers a suggestion on how to make a healthy, quick breakfast.

Evenings are usually when people have extra time to make food, so why not make breakfast at night?

This mason jar oatmeal recipe is easy to make and can be quickly grabbed on the way out the door.

  • 1/4 cup milk
  • Almond flavoring (optional)
  • 1/3 cup Greek Yogurt
  • 1/3 cup oats

“I like to add almond flavoring because it just adds that little bit of a punch to it,” said Susan. If you have a small eater or you’re making this for someone who won’t eat the entire jar, you can reduce the amount of milk, yogurt and oats.

The key to this oatmeal is to make it at night so the oats have time to soak up the milk, making it chewy in the morning.

“Don’t open the instant oatmeal bag. That’s very processed,” explained Susan. Using old fashioned or quick oats helps keep this breakfast healthy.

In the morning, make sure the lid is on tight. Then shake and go!
