This Thanksgiving, why not roll yourself a scrumptious, savory potato swill roll?

Ingredients

  • 2 potatoes, thinly sliced
  • 1 cup parmesan cheese
  • salt and freshly ground black pepper, for seasoning
  • 2 tablespoons olive oil
  • 1 1/2 cups shredded chicken
  • 1 onion
  • 1 clove garlic
  • 1/2 carrot, cubed
  • generous handful of spinach
  • 1/4 cup green olives, chopped
  • 10 to 11 ounces mozzarella, sliced

Steps

  1. Preheat oven at 350°F.
  2. In a baking pan that has been lined with parchment paper, sprinkle the Parmesan cheese over the entire surface.
