As summer winds down and we gear up for fall, it’s time to take a look at the next round of hot openings in Chicago. Boka Restaurant Group will be a major player this season with two restaurants and a rooftop planned, and Jason Hammel hopes to turn the Museum of Contemporary Art into a dining destination. Elsewhere, One Off Hospitality Group vets are bringing West Coast vibes to River North while Fulton Market is getting a two-pronged project featuring acclaimed cocktails and reimagined Chicago-style bites. These tentative projections are always subject to delays but if all goes well, expect the following places to premiere in the coming months.
Somerset/Devereaux

The Boka Restaurant Group has another busy season coming up. Lee Wolen takes the helm at the new restaurant inside the upcoming Viceroy Hotel in Gold Coast. Expect contemporary American cuisine with rotisserie items playing a role. Former Billy Sunday barman Lee Zaremba is pairing the food with Playboy Club-inspired cocktails that are divided into four sections: Martini, Collins, Rocks, and Swizzle. And because it’s the current hottest trend, Devereaux will be a year-long rooftop spot — pool and all — for guests to hang out at while enjoying light bites and libations from the Somerset team.

Two of Chicago’s brightest chefs are teaming up to bring the West Coast to the former Tavernita space in River North. Cosmo Goss and Erling Wu-Bower are leaving One Off Hospitality Group to form a new company, Underscore Hospitality. They’ll partner with their former colleagues at One Off on a project that promises light and fresh flavors. Whole oven-roasted fish, house-made flatbreads, and plenty of locally-sourced veggies will be on the menu, coupled with a laid-back atmosphere that transports diners to California. PST is also one of 16 restaurants on Eater National’s most-anticipated openings of the season.
Prairie School/Regards to Edith

One of nation’s most acclaimed mixologists is headed to the “Google Building” in Fulton Market. Jim Meehan, who opened New York’s heralded speakeasy PDT, will embrace the Midwest with a Frank Loyd Wright-inspired bar that promises to push the envelope. Also occupying the space will be Jared Wentworth’s latest project exploring Chicago classics. Taking its cues from Maxwell Street Market, Regards to Edith will reinvent iconic dishes with offerings like octopus Vesuvio, flaming halloumi, and steak in the form of a Chicago-style hot dog.
Marisol

Could museum dining be the next big thing in Chicago? Jason Hammel is doing his part to make it happen. The Lula Cafe owner is working with the Museum of Contemporary Art on a new restaurant as part of its $16 million renovations. The beautiful space will be accessible from street level and be open for lunch, brunch, and dinner. Lula’s former chef de cuisine Sarah Rinkavage will create farm-to-table fare such as dry-aged beef with spring onions and black currants; and swordfish with sunflower seeds and English peas.

Stephen Gillanders became a breakout star at Intro Chicago and he’s following up that success with a solo project in Pilsen. The restaurant is striving to be a unique but approachable spot that draws on influences from Mexico, Italy, and Korea. A la carte selections will include Maine lobster dumplings, foie gras bibimbap, and banana budino, while the beverage program will center around wine and pairings.
Bellemore
Location: 564 W. Randolph St.

2015 Eater Chicago Chef of the Year Jimmy Papadopoulos is partnering with Boka Restaurant Group to unleash his brand of “New American Classic” cooking on Chicagoans. The team is taking over the Embeya’s West Loop space so the former Bohemian House chef will have an elegant dining room to match his “very warm, very soulful, very fluid” menu. And just like Boka’s other project Somerset, Lee Zaremba is in charge of the beverage program and there will be a special bar station for him to “get a little geeky.”
Lonesome Rose

Land & Sea Dept. will extend its dominance over Logan Square when Lonesome Rose arrives in the coming months. The long-awaited restaurant and bar is billing itself as a “borderlands concept” focused on the regions of Northern Mexico and the Southwestern United States. That means guests will be able to enjoy tacos, Tex-Mex-inspired bites, and cocktails from the talented Paul McGee on the rooftop patio this fall. He debuted some of those items to the public at the Pitchfork Music Festival.
Funkenhausen

Mark Steuer is making his return to the Chicago dining scene with a German beer hall and French brasserie. Unlike his previous work at The Bedford and Carriage House, the new project is rooted in Steuer’s family heritage. The menu will feature European staples like house-made pretzels, schnitzel, and smoked beef rib roast. They’ll be washed down with German-style brews and wines from the old country, and it’ll all happen in an old West Town warehouse for maximum liveliness.
Sushi-san

Straight outta Lettuce Entertain You Enterprises comes a new sushi spot with attitude. Located in the vacated Osteria La Madia space, the casual Japanese restaurant will be headed by LEYE vet Doug Psaltis and executive sushi chef Kaze Chan. They’ll offer hand rolls and maki rolls, Bintochan-grilled meats and veggies, roll-your-own sushi, and nigiri bombs, as well as shaved-ice cocktails. Hip hop will also be incorporated into the design, making it the ideal place in River North to enjoy pristine fish served with a side of N.W.A. It’s the sushi sequel to LEYE’s Ramen-san.
Gibsons Italia

Who says you can’t teach an old dog new tricks? Gibsons Restaurant Group is going Italian for its first new downtown restaurant in 12 years. The modern steakhouse inside River Point will span three floors and include a retractable roof so guests can take in views of the gorgeous skyline. Chef Jose Sosa will supplement the experience with lots of meats and chops alongside pastas, risottos, and classic cocktails. This project was formerly-known as Coletta before executive chef John Coletta departed Gibsons.
