Everyone in the world loves watermelon ... except for me. I will never say yes to a wedge at a picnic, and I'll never stopping getting flack for this fact. It's the one fruit I truly loathe, which is upsetting seeing as it seems to be the all-American fruit of summertime.

Me making anything involving watermelons makes zero sense. But I had a vision of pretty pink cocktails poured into giant rind cups that I couldn't shake. I was pretty sure people NEEDED this drink. So I swallowed my pride and bought a couple of melons. I hallowed them out, made the picture-perfect cups, froze the scooped out insides and blended the pink chunks with rum, coconut milk, lime and agave. The finished drinks look as if you've pulled them straight from a Pinterest board.

Even though I was depending on my coworkers and their melon-loving palettes for tasting notes, I honestly couldn't stop myself from grabbing the fruit cup and sipping for myself. It was garnished with a mini umbrella, for goodness sake. Shock, confusion and delight hit me just before the brain freeze kicked in. Finally, a watermelon recipe I, not only didn't hate, but actually liked. If I like it, you'll love it.
