There’s no question that RVing and camping are fun for the whole crew, but you don’t have to be stuck eating hotdogs for a week while you’re gone. No, no, RVing doesn’t mean that you have to digress to a culinary caveman. Keep your family and friends coming back with these easy recipes we got a taste of at a friend’s campsite. It’s time to give those weiners and s’mores a break, huh?

CAMPGROUND BEEF STROGANOFF

Work a magically delicious beef stroganoff in your kitchen with this easy recipe. Serve it with a side of veggies, like peas or green beans, for a wholesome meal.

Ingredients:

Olive or vegetable oil

1 ½ lbs. beef steak sliced into thin strips

1 large yellow onion

8 oz. sliced mushrooms

16 to 20 oz. beef broth or stock

Black pepper

3 Tablespoons cornstarch

Noodle ingredients:

1 cup sour cream

¼ cup white wine

1 teaspoon dill

1 cup minced fresh parsley

Salt

12 ounces of noodles

Get Cookin’

Heat the oil in a skillet and add the beef. When the meat has browned put it directly into the crockpot. Add the remainingingredients into the crockpot. Stir to mix well, then cover and cook for 8 hours on the lowest setting.

Stir in the sour cream, wine, dill, parsley and seasonings. The stroganoff should be thinner than gravy, but not too watery. Serve over your noodles and enjoy!

BEER CHEESE SOUP

Sometimes it can get a little chilly while you’re enjoying the outdoors. Especially in the colder months, come in and warm up with this delicious beer cheese potato soup.

Ingredients:

3 Tablespoons butter

1 medium onion, chopped

2 or 3 stalks of celery, sliced

3 large potatoes, peeled and diced

12 oz can of mild pilsner beer or ale

1 bouillon cube, crushed

1 cup half & half

½ cup milk

1 cup shredded cheddar

Salt and pepper

Toss the onion and celery in butter in a medium soup pot until they are tender. Add the diced potatoes, beer and bouillon cube. Cover and bring to boil, stirring frequently. Reduce heat and simmer until potatoes are tender, stirring occasionally. Lower heat and stir in the half & half and milk. Sprinkle the cheese and stir to melt. Stir the soup until it begins to thicken and is near a boil. Add salt and pepper to taste.

BRING ON THE BROWNIES

Ingredients:

½ cup unsalted butter

½ cup sugar

½ cup brown sugar

½ cup all-purpose flour

¼ teaspoon salt

½ teaspoon baking powder

6 Tablespoons unsweetened cocoa powder

2 eggs

1 teaspoon vanilla

½ cup chopped walnuts (optional)

Get Cookin’

Place the butter in a medium microwave-safe bowl and melt the butter completely. Combine with the sugar and brown sugar. Set aside to cool while you stir all the dry ingredients together. Add the eggs and vanilla to the butter/sugars mixture and beat for one minute. Add the dry ingredients mixture and carefully stir until it is just combined. Stir in the nuts. Pour batter into an oiled 8×8 baking dish and smooth the top with a spatula. Bake for 20 minutes at 350°, or until the brownies appear to be leaving the sides of the baking dish. Allow the brownies cool completely, cut, serve over ice cream and enjoy!
