May is a very busy month. It's National Photography Month, Grapefruit and Kiwi Month, National Bike Month and National Salsa Month--just to name a few. And, if you're a vegan or vegetarian, or someone who just likes to stay healthy, there is another "holiday" to add to the month of May. This month is National Salad Month.

Now, for vegans and vegetarians, salad is a staple food for us. Personally, I have two to three salads a day. What's on my salad you ask? Well, I keep them pretty simple. Romaine lettuce, a lot of cut up veggies, unsalted sunflower seeds and a homemade oil and vinegar dressing.

Because it's National Salad Month, I was thinking, "What makes a great salad?" Is it the lettuce used, or the veggies, or the toppings? I think what makes a great salad is the dressing. So, today, I would like to share with you a few vegan salad dressing recipes so that you can celebrate National Salad Month in style.
