How to Make Easy and Delicious Pumpkin Bread This Fall
This pumpkin bread recipe is as delicious as it is simple.
Pumpkin bread is essentially synonymous with fall: It's always the first autumnal recipe I want to break out after Labor Day, and it just feels right when paired with a PSL. Plus it works as breakfast, dessert, and bread basket fodder (which is the definition of fall recipe #goals, if you ask me).
Perhaps the best thing about pumpkin bread, though, is that it's one of the easiest seasonal treats you can make. To whip up a loaf of your own, just follow our Test Kitchen's simple recipe below — and don't forget to steal these expert-approved tips along the way.
1. Line your pan with parchment paper for easy bread removal. Tear off an extra-large piece of parchment paper and press it against the bottom of a greased loaf pan before baking. If you leave at least 1 inch of paper hanging over each of the long sides of your pan, you can use them to seamlessly pull your bread up and out once it's cooled.
2. Avoid over-mixing your dough. When it comes time to combine your wet and dry ingredients, be sure to mix them only until they're lightly blended. This ensures your bread won't come out too hard.
3. Make it your own with fun ingredients. To put a unique spin on pumpkin bread, we added crunchy pepitas (a type of pumpkin seed) to the top of our loaf. For an added boost of flavor, experiment with stirring in other tasty morsels, such as chopped nuts or mini chocolate chips.

Ingredients
- 1 3/4 c.
all-purpose flour
- 1 tsp.
baking powder
- 1/2 tsp.
baking soda
- 1 1/2 tsp.
pumpkin pie spice
- 1/2 tsp.
kosher salt
- 1 c.
sugar
- 1/2 c.
unsalted butter, chopped
- 2
large eggs
- 1 c.
canned pure pumpkin
- 2 tbsp.
milk
- 1 tsp.
pure vanilla extract
- 1/2 c.
pepitas (optional)
Directions
- Step 1Heat oven to 350°F. Lightly grease one 8½ x 4½-inch loaf pan and line the bottom with parchment paper, leaving at least 1 inch of overhang on the two long sides.
- Step 2In a large bowl, whisk together flour, baking powder, baking soda, pumpkin pie spice, and salt.
- Step 3In a second large bowl, add butter and melt in microwave for 1 minute.
- Step 4In the bowl with butter, add sugar, pumpkin, eggs, milk, and vanilla, and whisk together. Add flour mixture and mix.
- Step 5Pour mixture into the prepared loaf pan. (Optional: Sprinkle pepitas on top.) Bake until a wooden toothpick inserted into the center comes out clean, or about 45 to 50 minutes.
- Step 6Transfer the pan to a wire rack to cool for 10 minutes before using the parchment overhangs to remove the bread to cool completely.
