Gingerbread House Day is observed annually on Dec. 12. An Armenian monk, Gregory of Nicopolis, brought his favorite food, gingerbread, to Europe around 992 AD. These gingerbread houses were created in a kindergarten classroom at Pleasant Ridge Elementary, December 2014.

Christmas cookie fun facts: 1. Queen Elizabeth I invented gingerbread men.  While she didn’t actually bake the cookies herself (she was a queen, after all), she did request that her royal bakers create gingerbread cookies shaped like visiting dignitaries in order to honor them.
2. We leave cookies for Santa because of the Great Depression. It wasn’t standard practice to leave cookies and milk out for Santa Claus until the 1930s. 
3. Cookies were originally made to test oven temperature. According to culinary historians, cookies as we know them today were first made not to eat but to test the temperature of an oven. 
4. Santa Claus eats over 300 million cookies on Christmas Eve. Every Christmas Eve, Santa visits over 500 million homes where he encounters about a billion cookies. This gorgeous view of the Atlantic Ocean was taken from inside Castillo San Cristobal in Old San Juan, Puerto Rico, August 2018. Fort San Cristobal was built to protect Old San Juan from land attacks and El Morro was built to protect from sea attacks. Cristobal is considered the younger of the two forts since it is only 230 years old.

Built by Julian Scarborough & St. Julian Springs in 1936, 2nd Avenue Pier in Myrtle Beach has brought enjoyment to millions over the years. The Lucas/Collins family has owned & operated the pier since the mid-60s. In  1954 Hurricane Hazel took out the pier completely. The owners rebuilt & business continued to grow. In 1981, Hurricane David damaged the pier ~ but it was the infamous Hurricane Hugo that took the pier out once again in 1989. The pier was rebuilt and continues to be a popular spot on the beach.

The Cathedral of St. John the Baptist, built in 1873, is a Roman Catholic cathedral on Lafayette Square at 222 East Harris St., Savannah, Ga. It is the Mother Church of the Roman Catholic Diocese of Savannah. The stained glass windows, executed by the Innsbruck Glassmakers in the Austrian Tyrol, were installed in the Cathedral around 1904. A photograph does no justice to the cathedral, a must-see when visiting Savannah.

The Green McAdoo Cultural Center and Museum tells the compelling story of 12 high school students, who in 1956, braved threats of violence to attend Clinton High School, making it the first desegregated public high school in the South. This classroom photo was taken inside the museum during a Shopper intern trip several summers ago. The center is open Tuesday-Saturday, 9 a.m. to 4 p.m. Info: 865-463-6500.

Now that spring has arrived (or so the calendar indicates!) it's time to start thinking about plans for summer vacation. What is your favorite go-to vacation spot? Is hanging out on the beach most relaxing? Or a long weekend of golfing? Or climbing mountains? This resort in Cozumel, complete with queen size beds by the pool, is always a favorite spot of mine.

The farther south you go, the sooner you will see them. 3) Daffodils need a cold frost for flower bud initiation. These beautiful flowers were found growing at Adrian Burnett Elementary School in the Halls community.

Ferris was a civil engineer who made the first Ferris Wheel at the World's Columbian Exposition – also known as the Chicago World's Fair – in 1893. Art students at Halls High created this mural that now hangs in the entryway of the school. The project features the three school buildings that were the high school and celebrates the 100th anniversary of Halls. Students in Jerry Lewis's and Elizabeth Lynch's art classes worked together to complete the project at the end of the 2016-2017 school year in time for the centennial celebration.

The "kindness rock" craze continues to grow in Knoxville. Teachers at Pleasant Ridge Elementary in the Norwood area joined in the fun prior to the first day of school. Teachers painted rocks featuring positive and encouraging messages and placed them in the front garden of the school. During art class, students will be able to create their own kindness rock to share.

The two flowers blend together so well they also symbolize true love. Five-year-old Cameron Jedlicka stopped by Balter Beerworks (with his grandfather, owner David Wedekind) last week to meet Knox County mayoral candidate Glenn Jacobs and bring him a campaign contribution from his piggy bank. Unable to accept a cash contribution, Jacobs signed the bill "Kane" and returned it to Cameron as a keepsake.

This monument of Will Rogers sits outside the Claremore Progress in Claremore, Okla. Rogers, a political humorist and actor, was quoted as saying, “All I know is what I read in the papers.” The statue was sculpted by Sandra Van Zandt and was dedicated on Nov. 2, 1996.

The Blue Whale in Catoosa, Okla., is a popular roadside attraction off historic Route 66. Built in the early 1970s, this 80-foot whale was a gift from Hugh Davis for his wife, Zelta. Once used solely by family, it became a favorite spot for the community to enjoy. It closed in 1988 for swimming, but people still stop by to explore the structure, fish and enjoy picnic lunch on the grounds.

There is nothing like a puppy to make me smile. This is Turk (named Turkey because he was born on Thanksgiving Day). He’s a miniature schnauzer that stole my heart. He lives in Nashville now but thanks to technology, we are able to FaceTime and keep in touch.

Summer is in full swing, so what are your plans for adventure? One of my favorite places to spend time is Myrtle Beach. The beaches are filled with families and fun, but mostly I enjoy walking the stretch of the sand early in the morning before the activity begins. Walks to the pier always give me time to think, reflect and relax.

The artwork shows popular sites in Knoxville, including Neyland Stadium, the Tennessee Theatre, dogwood blooms, the Sunsphere and the riverboat. It makes a great backdrop for photographs by tourists and native Knoxvillians.

I pass this old Texaco sign every week as I drive to Copper Ridge. It’s nothing special but there is something about the weathered look against the white brick building that grabs my attention. I often wonder about the station when it was operative and the people who would visit as they passed by.

As I drive around Knoxville each week, I see some interesting sights. This wooden cow near Holston Hills was one of them. I’m not sure why it was at the neighborhood entrance, but it was interesting nonetheless. It could have possibly been a greeting for the dogwood trails through the area or just an attention grabber. The world may never know…

Students in Halls High Art Club created this beautiful piece of art showing wildlife in Tennessee for the annual Dogwood Arts Festival Chalk Walk. The group received second place for their work. Participants included Haley Ortner, Kacey Cannon, Emily Roark, Harrison Campbell, Eli Meyers, Julianna Patterson, Carlie Talent, Colby White and Gage Nicely.

Maddox and several teachers visited the Ron Clark Academy in Atlanta last year and implemented his ideas for motivating students. The assemblies are short yet high energy gatherings to announce team winners from the previous week for work habits, attendance, being on time, behavior, kindness and grades.
