Banana bread is a tasty staple to have around for morning teas and the kids’ lunchboxes.

Our version is spiced up with essential oils of cinnamon, ginger and nutmeg for extra flavour and vitality. Whether you’re applying essential oils, inhaling them or adding them to foods and beverages when the label indicates it’s safe to do so*, please always be sure to choose authentic essential oils. Ginger Spiced Banana Bread

  • 4 medjool dates, washed and deseeded
  • ½ tbsp maple syrup
  • ½ cup coconut flour
  • ½ tsp salt
  • ¼ tsp baking soda
  • 6 eggs
  • ½ tbsp vanilla
  • ¼ cup coconut oil (place jar in warm water if needed to liquefy)
  • ½ cup very ripe bananas, mashed
  • ½ cup walnuts, chopped
  • ½ cup pecans, chopped
  • 1 drops ginger essential oil* (adjust to taste)
  • 1 drop nutmeg essential oil* (adjust to taste)
  • 1 drop cinnamon essential oil*(adjust to taste)

Preheat the oven to 175°C.

Place the dates and maple syrup in a food processor and whiz to combine.

Add the date mixture to a large mixing bowl with the remaining ingredients and mix to combine.

Pour the batter into loaf tin and place in the oven for 30 minutes or until golden.

Serve warm from the oven with or without organic butter, or lightly toasted and topped with a smear of honey.  For an extra boost of protein, top a slice with a smear of cream cheese or slice of aged cheddar.  For non-dairy jazzing up, eat lightly toasted with a scoop of coconut ice-cream or coconut yogurt and a sprinkle of cinnamon powder.
