Here at Say Cheese! We believe that Grilled Cheese is America’s Staple Comfort food and nearly 5 years ago Eric Kilgore and his Say Cheese! team decided that the world (specifically the DMV) needed options for good American comfort food and so the Say Cheese! food truck was born. Say Cheese! started with a dream of providing people with options when it came to everyone’s favorite comfort food and has expanded to add soups, mac & cheese and even dessert grilled cheese. Say Cheese! is not just another food truck it’s a taste bud experience. Say Cheese! prides itself on using the freshest ingredients and preparing your grilled cheese made to order.
While the Say Cheese! food truck is still in operation we have expanded to a carry-out spot that allows for people who can't make it to the truck to either walk-in and pick-up their order or use one our four delivery partners!
It’s important to keep this legacy of grilled cheese on wheels alive because it’s not just a business for Kilgore it truly is a way to give back to his community. Providing jobs for those who might not otherwise be able to secure employment, empowering his employees to dream bigger than their circumstances and to be an example to those around him that your circumstance are NOT bigger than your dreams. Kilgore overcame his own obstacles to follow his dreams and is excited to continue to grow Say Cheese! and dream even bigger with your help!
Kilgore is a firm believer in continuing to push through the challenges and inspire those around you. His inspiration comes from his grandfather Booker T. Kilgore (which by the way he has a sandwich named after him on the truck)! Booker was a fighter he served in the military, retired from Chrysler and did all he could to make sure his family was well taken care of, so Kilgore comes by his desire to face challenges and continue to inspire others in the process naturally.
So you might be asking what will $100,000 do for Say Cheese!? $100,000 will help Kilgore and his team expand to urban environments in cities such as Baltimore, Indianapolis & Detroit. Expanding to these cities will help create jobs for those who might be deemed unemployable, formerly incarcerated, homeless men & women, inner city students and others from vulnerable populations. The plan is to open carryouts in these cities that will serve the community by allowing for job training, providing employment and serving delicious food! These carryouts will allow those who are struggling to find their way thrive!
The other dream that Say Cheese! has for 2020 is the Say Cheese! Live Farm in rural Michigan. A working farm that will allow for residents to live to thrive. We believe that when given the opportunity to fuel your body properly, feed your mind and nourish your soul you're more likely to thrive. The Live Farm will be a working farm that will allow for residency of individuals who are going through the Live to Thrive program. The program is designed to help residents learn how to properly fuel their bodies with the proper nutrients (diet and exercise are an important part of thriving), how to feed their mind through hands-on educational opportunities, job training that will allow them to chase their career dreams and stocked library because we believe that reading changes everything and finally how to nourish their soul through worship opportunities, meditation and learning how to self-care. Self care allows our souls to be full, which in turn causes us to thrive in all situations.
There will be two other aspects to the Live Farm, there will be a working farm that will allow us to provide the freshest ingredients to local business, farm visitors and surrounding communities. We will produce and sell fresh cheeses (including Vegan friendly cheese), Alkaline water, fresh vegetables, meat and bread. Visitors to the farm will have the opportunity to purchase products on site to take home and we will provide to local businesses wholesale opportunities. Also on site will be a visitors center where visitors can learn about the programs offered at the Live Farm, stay on site and shadow residents to see how the Farm runs and is beneficial to both residents and the community, and shop! Residents will be able to rent space in our Say Cheese! Live Farm lodge that will be both independent guest and family friendly. We truly believe a visit to the Live Farm will be life changing.
