Little Big Town’s Kimberly Schlapman isn’t just a star on the stage…she’s a queen in the kitchen as well!

Just in time for the cold of winter to kick in, Kimberly posted a homemade chicken noodle soup recipe on Facebook for all of her fans to try out. With a busy schedule like hers, Kimberly makes sure that the recipe is easy to follow and is quick enough for anyone to whip up on a chilly weekday evening at home.

Kimberly Schlapman’s Chicken Noodle Soup

Prep time: 10-15 minutes
Cook time: 25-30 minutes

Ingredients (listed in order of cooking steps):

1 full size rotisserie chicken, cooked
1 cup carrots, sliced
1 cup celery, sliced
2 tablespoons olive oil
Mushrooms
10-12 cups chicken stock
1 bag egg noodles, cooked according to package
½ cup grated parmesan
½ cup heavy cream
Fresh herbs of your choosing
Salt & pepper to taste

Directions: 

1. Pick up all ingredients needed from any grocery store—don’t forget the cooked rotisserie chicken!

2. Slice up the carrots and celery, just the right size for every bite.

3. Put the veggies and olive oil into a large pot and cook for 10 minutes.

4. Add mushrooms and continue to cook for a couple more minutes. (Don’t worry about how much or for how long—this is when Kimberly wants you to make it your own!)

5. Pour in the chicken stock and cooked egg noodles to your pot. Cook for another 5-10 minutes.

6. Add the grated parmesan and heavy cream to the mix. Don’t forget to spice it up with some of your favorite herbs to give the soup its own personal flavor! Cook everything for another 5 minutes.

7. To taste, add a dash of salt and pepper if you so please.

8. Supper is served! Treat yourself to a bowl (or two) while it’s still hot!
