Fiery Candied Walnuts

A sweet and fiery coating kicks up the flavor on these candied walnuts – California style. Try it with a mix of nuts too!

Fiery Candied Walnuts in Jar

Without a doubt, this is the easiest, most rewarding recipe for coating all those fresh, California nuts with goodness. The first thing to remember is that you can substitute any nut in place of the walnuts like pecans, almonds, or pistachios. Although this recipe will work for all nuts, walnuts have all the deep nooks and crannies that help achieve the fullest flavor and the most even coverage. 

In the event that you’re worried about the heat in this recipe, it’s pretty mild. In fact, you can’t even feel the heat until the end…

and it mellows quickly.

Above all, the best part of this recipe is that it is not greasy! Rather than another form of coating, we use egg whites to help the seasoning stick to the nuts, making it much more healthy. Not to mention, almost guilt-free!

Whether you’re making these for snacking or as a fabulous addition to any salad or roasted vegetable dish, this recipe is tasty!

Let’s make these spicy candied walnuts:

Cayenne and cinnamon laced sugar mixture in bowl

First, we start with a cayenne and cinnamon laced sugar mixture.

Egg white frothed

Then, you’ll whisk an egg white until it froths, which only takes about 30 seconds by hand to get it to the right consistency.

Toss walnuts in egg white

OK, let’s candy the walnuts:

Following that, toss your walnuts in the egg white.

Add spice mixture to egg yoked covered walnuts

Add your spiced sugar mixture to the egg coated walnuts.

Stir & bake the candied nuts:

Finally, toss walnuts to coat and bake at a low heat for one hour.

Ingredients
  

  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon cayenne
  • 1 egg white
  • 2 cups California walnuts

Instructions
 

  • Preheat oven to 250 F
  • Combine the sugar, salt, cayenne and cinnamon in a small bowl
  • Whisk the egg white until frothy in a large bowl
  • Add the walnuts and toss to coat
  • Add the sugar mixture and combine so all the walnuts are covered
  • Place on a greased cookie sheet and bake for one hour (stir halfway through cook time)
  • Transfer to parchment paper and allow to cool

Notes

Store for two weeks in an airtight container
