In the Kitchen with Chrissy Brown- Broccoli and Cheese Soup



Food is something that I absolutely love. The thought of fresh baked brownies or a creamy mushroom risotto makes my mouth water. 

My husband is the best cook, where as I teeter on mediocrity. 

However, I do have some go to recipes that even a kitchen novice like me can’t mess up. 

Here is a soup Sunday favorite my kids can’t get enough of.

Not quite Panera, but just as awesome broccoli and cheese soup


Ingredients:

1 tbs melted butter

½ onion, chopped

¼ c melted butter

¼ c flour

2 c half and half cream

2 c chicken stock

½ lb fresh broccoli

1 c carrots, julienned

¼ tsp nutmeg

8 ounces grated sharp cheddar cheese

Salt and pepper

2 c milk

1 pack Velveeta cheese (not completely necessary but it makes it soooo good)

Yeast rolls

Directions

Saute onion in butter. Set aside.

Cook melted butter and flour using a whisk over medium heat for 3-5 minutes or until you see a noticeable golden brown color in your pan.

Slowly add in the chicken stock and whisk again to combine. Simmer contents covered (stirring occasionally) for 20 minutes over medium heat.

Add the broccoli, carrots and sauteed onions. Stir, add the milk and half and half. Cook covered over low heat for 20-25 minutes, but do not bring to a boil (the milk could curdle..yuk!)

Add salt and pepper and nutmeg. Cook over low heat adding cheese slowly (I do one handful at a time to avoid clumping.) At this point I taste it. Sometimes it’s just right, others I’m wanting a bit more oomph. For the extra cheesy kick that brings it a little closer to a Panera taste, add the Velveeta cheese.

Serve immediately, preferably with yeast rolls.

Stays tasty for up to five days in the refrigerator in a covered container.

Two days. It’s been two days without Mallory, and I’m going fucking crazy. I miss her so much it hurts. I didn’t know it was possible to fall for somebody so fast and so hard. It sucks; being alone sucks.
Days are hard. Nearly every place I go triggers a memory, but nights are even harder. Every time I close my eyes I see her face. Her heart breaking over and over again in my dreams. I don’t know if my memories are becoming clearer as time goes on or if my mind has started filling in the blanks. My nightmares get so bad I can’t sleep unless I black out.
Every breath hurts, every movement, even something as simple as getting out of bed in the morning is a struggle. The guilt of knowing how much I hurt her and the loneliness I feel inside eats me alive.
