PARAMUS -- Shake Shack on Route 17 South is getting a neighbor.
A Greek restaurant, called Eons Greek, is expected to have a soft opening on the Friday before Memorial Day, Chef George Georgiades said Thursday.
The restaurant will be "fast casual," which Georgiades, 51, of Mahwah, says means he'll serve quality food in a casual setting.
Similar to Chipotle, customers at Eons will start with a base of a pita, rice or salad. Customers then choose a protein and sides.
The protein options range from antibiotic-free lamb, grass-fed steak, organic salmon and octopus. Prices range from $7.25 to $14.70.
This is the second location for Georgiades' Greek restaurant, with the first being in Manhattan. He said he hopes to expand to other parts of New York, New Jersey and, eventually, Washington D.C.
"I honestly believe this is where food is going -- it's quick, it's easy, you can pick what you want," Georgiades said.
The restaurant will be open from 11 a.m. to 10 p.m.
