Peanut Butter Cups

Yesterday we were guiltily scoffing our way through a fun size bag of Reese’s Peanut Butter Cups and lamenting about the sugar and calorie content, when one STELLAR staffer revealed that she made her own peanut butter cups at home, and, better yet, they’re a stack load less sinful.

Fast forward to today, and we’ve a got a yummy, guilt-free batch of peanut butter cups (courtesy of STELLAR staffer Pippa) to enjoy, and they only took ten minutes to rustle up. We’re betting they’ll be gone just as fast.

 

Here’s the super simple recipe:

You’ll need:

  • One large block of 70% dark chocolate
  • Eight teaspoons of peanut butter
  • Paper cases

Makes approximately eight cups.

1. First break up the chocolate in a bowl and melt it over boiling water on a medium heat. Be careful not to let steam come in contact with the chocolate because it will curdle. If a lot of steam appears turn down the heat.

2. Next, put the peanut butter in a bowl and pop it in the microwave for 10-15 seconds, just to soften it a little.

3. Line the paper cases out on a baking tray or plate and spoon in a teaspoon of the melted chocolate, followed by a teaspoon of peanut butter, and then another spoon of chocolate on top. At this point, they might start to mix together but its okay, this won’t affect they’re deliciousness so fear not.

4. Next, pop the peanut butter cups in the fridge for a few hours until they harden.

5. Then it’s time to indulge in the deliciousness! Enjoy!
