Spicy Mustard Chicken Meal Prep

Meal prepping is a great way to have some amazing meals ready whenever you need them. In some cases, your schedule simply does not leave you enough time to cook a homemade meal. However, this does not mean you have to reserve to eating unhealthy fast food. With meal prepping, you can have a homemade lunch every day of the week. Here is one of the easiest meal prep recipes that you will certainly enjoy. It is a spicy mustard chicken meal prep recipe. Now, with that being said, let’s get cooking.

For this amazing recipe, you will need two pounds of chicken breasts. To marinade the chicken get the following ingredients: one-third cup of either Dijon or coarse ground mustard, one-fourth cup of raw organic honey, one tablespoon of apple cider vinegar, half a tablespoon of smoked paprika, one and a half teaspoon of either minced garlic or garlic paste, one teaspoon of cumin, salt and pepper to your taste, and lastly if you want some heat, one teaspoon of cayenne.

To prepare set your oven to 400 degrees Fahrenheit. For better taste, if you have a grill, use it instead of the oven. Next up, get a bowl that is big enough and mix together all of the ingredients for the marinade. When that is done, take a plastic bag and put the chicken inside. Add about two-thirds of the marinade to the bag and mix it with the chicken. Leave it sealed like that to marinade for about 20 minutes. After 20 minutes, take the chicken out and put it on the grill, or on a baking sheet if you use the oven. Cook like that for 10 minutes on each side. Take the remaining marinade and brush the chicken after you flip it for the first time.

You can use this chicken for anything. Eat it with rice or make a simple chicken salad. Just make sure to freeze the chicken without cutting it first. Enjoy!

Ingredients for 8 servings of 4 oz chicken breasts:

  • 2 lb chicken breasts
  • Marinade:
    • 1/3 cup coarse ground mustard (or dijon)
    • 1/4 cup raw organic honey
    • 1 tablespoon apple cider vinegar
    • 1/2 tablespoon smoked paprika
    • 1.5 teaspoon garlic (minced or paste)
    • 1 teaspoon cayenne (optional)
    • 1 teaspoon cumin
    • sea salt & pepper to taste

Steps

Step 1

Set the heat on your grill (or oven) to 400F.

Step 2

Add all of the ingredients for the marinade in a bowl and mix together.

Step 3

In a sealable plastic bag, add the chicken breasts. Pour about 2/3 of the marinade in the bag with the chicken, seal it and shake, ensuring all the chicken breasts have been covered in the marinade. Allow the chicken breasts to marinate in the bag for about 15 to 20 minutes.

Step 4

Next place the chicken breasts on the grill – or a baking sheet for the oven – and cook for about 10 minutes on one side, then flip over.

Step 5

Brush the chicken with the remaining marinade and cook on the other side for another 8 to 10 minutes. Note: depending on the size and thickness of your chicken breasts, more or less time may be needed to ensure the chicken is properly cooked.

Step 6

If this is for your meal prep and you will eat it later in the week, remember to allow the chicken to cool to room temperature then freeze it. DO NOT cut it prior to freezing. Defrost it in the refrigerator the night before you are going to eat it.
