Dish | Grind Burgers, Bistro 301 and Seviche

Paul Skulas joins Grind Burger Kitchen, 3311 Preston Hwy., next week as head chef. Skulas, who was most recently sous chef at Holy Grale, has worked for James Beard Award winner John Currence. Grind's creator Jesse Huot will move into an operator role and focus on a new location. Huot and Skulas will also update the menu to expand from their popular burgers to more sandwich and entree options as well as updated salads, sides, and appetizers.

Bistro 301, 301 W. Market St., has new hours; open Tuesday-Saturday, lunch is 11:30 a.m.-2:30 p.m. and dinner is 5-10 p.m.

Seviche, 1538 Bardstown Road, will host a viewing for Southern Uncovered, the Ovation Network food show that filmed in Louisville this spring. The episode airs at 8 p.m. July 5. James Beard Award-winning food and travel writers Matt and Ted Lee visited Bourbon Barrel Foods, Seviche, Mayan Café, Sunergos Coffee and Decca for the show; employees from these places will gather at Seviche's lounge to watch.
