Project Pie Will Expand With Six Restaurants in Denver

Founder James Markham opened the first Colorado location of the pizza restaurant in Boulder last month. Now, he's making good on his promise to expand.

Project Pie, which opened its first Colorado location in August in Boulder, will launch its build-your-own-pizza experience in Denver through a franchise deal set to bring six new restaurants to the metropolitan area.

Project Pie's schtick is the self-proclaimed perfected pizza quickie: every custom-built pizza is cooked in two minutes in a high-temperature, stone-hearth oven and served to the guests in less than five minutes from the time of their order. Founder James Markham aimed to follow the Chipotle model when he created the company in 2012. 

The new restaurants in Denver will be owned and operated by local entrepreneur Bruce Koeller, who also operates other franchises in Denver. Koeller expects to open the first restaurant in Spring 2015 and hopes to open the additional five over the next few years. "I'm eager to bring the Project Pie concept to Denver," said Koeller. "I love being able to put the power in the hands of the customer, allowing them to see the arrangement of fresh ingredients and create their own masterpiece."

Project Pie offers a wide variety of toppings while charging the same price whether a pizza has two toppings or 26. The pre-designed menu features classic cheese pizza, a prosciutto and caramelized onion pizza and other white pizzas that come with no sauce - and customers can customize any creation with gluten-free crust. 

In addition to pizza, Project Pie also serves salads and housemade desserts as well as Boylan's fountain sodas.
