MAKO SHARK LOINS
Product of the US

Feeding on some of the worlds fastest tunas and billfish, the mako shark is at the very apex of the marine food chain. It is also among the best tasting of hundreds of shark species around the world. Mako Shark is moist and slightly sweet, with a full bodied, and meaty taste. Both flavor and texture are similar to swordfish, but the flesh of mako is moister and the meat is not as sweet. Mako shark can be marinated, blackened, cubed for use in stews and soups or chinked for kabobs, all great baked, steamed, sauteed, broiled and our favorite

MUTTON SNAPPER

In the Florida Keys, Mutton Snapper inhibit both the shallow water over the coralline bottom or the low-relief reef structure searching for fish, shrimp, crab, squid and snails. Mutton Snapper resembles the red snapper as both taste and appearance are very similar once filleted. Mutton Snapper's flesh is considered by most as excellent table fare. The meat is white, flaky and light, and is excellent prepared in a variety of ways. The flesh is firm and ideally suited for baking and broiling, however snapper responds well to just about any cooking method.
#1 DOMESTIC BLUEFIN TUNA

The largest of the commercially harvested tuna family, this fast swimming, migratory specie inhibits temperate and tropical waters throughout the world. Most Domestic Bluefin Tuna is Harpoon caught, and is a well managed fishery. There are annual quotas and limits on the amount of fish a vessel can keep per trip and season, as well as size, location and gear restrictions.  Because of Bluefin's high fat content, our #1 grade tuna is known as a sashimi grade, the freshest and fattiest of any tuna. Not only is this the freshest and fattiest, but also the darkest of all tunas. The flavor is distinctive and the meat is firm, perfect for summertime grilled dishes.

Our Local Great Lakes are FINALLY starting to produce a regular supply of Walleye and Perch! The weather is starting to cooperate, and the fish are starting to bite. Our walleye supplies look good for the weekend, as does our White fish, Yellow Perch and Bass supplies.
OPAH LOINS
Product of Hawaii

Opah, also known as Moonfish, are open ocean dwellers that are caught individually by fishermen using longline gear. Previously named as an underutilized specie, Opah has since grown in popularity and has found its way on several menus as a "Fresh Catch of the Day."
Opah has a rich, creamy, full flavored taste with a firm, fatty texture. The loin has a distinctive flavor, very sweet and tender, also the easiest part of the fish to handle. Opah can be compared between tuna and swordfish, also a steak fish as well.  The opah's flesh is rich with healthy oils, and is great grilled, broiled, sauteed, raw, or smoked and ideal for Poke, Sushi, and Sashimi!

CAVENDISH OYSTER
The Cavendish Cups are graded as a large choice oysters and are sourced through the pristine waters of Northwestern Prince Edward Island.  This region of the Canadian Maritimes has long been associated with producing some of the finest oysters available anywhere, and our Cavendish Cups are a prime example of everything a wild, large choice oyster should be. Cavendish Cups range between three and a half and four and a half inches in length, and possess dense, hard valves which shuck easily.  Meats are full and firm, and have a flavor composition which is characterized by a bright brininess.  Cavendish Cups are hand packed by the 50 count.
