Four Fabulous Ways to Enjoy Fresh Cherries, and a Cooking Demo on Fox

It’s Wednesday morning, and as this post is being published I am busy filming another live spot on Fox Philadelphia WTXF’s Good Day.
This time I’ll be talking about all the fun ways to enjoy my favorite summer fruit: cherries!
You all know how much I look forward to and enjoy cherries at this time of year. They just make summer so special, and I like to buy/eat/use them as much as possible while they are in season. They are at their absolute peak of flavor right now and there’s no other time of year when you can score them for such a great price!
Besides just eating them right out of hand, there are lots of delicious ways you can incorporate them into your baking. On today’s Good Day, I’m demonstrating my favorite pie crust recipe. It’s so buttery and flaky, and it only has four simple ingredients. I love keeping a disc of this pie dough in my freezer so I can whip up a pie whenever the mood strikes. Whether you do a traditional pie with an intricate lattice top, or a simple free-form galette, this pie dough recipe will be your best friend.
I’ll also be demonstrating how cherries make a great addition to my favorite breakfast muffins. Last time we had overnight guests, I whipped up a batch of these blueberry muffins and they were a big hit. They’re light as a feather and bursting with fruit, and the buttery streusel on top is the crowning touch! The best part is, they’re made in less than 30 minutes. You’ll love them with blueberries, but they’re just as good, if not even better, with a few handfuls of coarsely chopped fresh cherries and some chocolate chips. Add in a teaspoon of almond extract to accent the cherry flavor 😉
Have you seen this Blackberry Goat Cheese Cheesecake? The blackberry topping works equally well with cherries; just sub them out in equal measure. In just 10 minutes you’ll have a thick, sweet compote full of chunky fruit. It’s great on cheesecake, but don’t stop there! I spoon it over biscuits, pancakes, with Greek yogurt, as an accompaniment to a fancy cheese plate… I’ve even been known to give jars of it away as gifts. Click here for the recipe.
And finally, we’ll be enjoying a little cherry lemonade on this lovely summer day. There’s no need to resort to a dusty, artificially colored powder when you want that pink lemonade fix. With gorgeous fruit like this, all you need are lemons, sugar, water, and fresh cherries. Whiz it up in the blender and serve over ice. You could even pour it into popsicle molds for a super refreshing treat. Heck, I wouldn’t get mad at a little splash of bourbon in there too. 😉

Lol! Thanks Kelly! I have to admit, those muffins may have been even better with cherries than they are with blueberries. Of course chocolate gives them a bit of an unfair advantage though… ;P
