After a long workday, what do you eat?

A simple sandwich. After working long hours in the kitchen it's easiest and satisfying.

What’s your guilty (food) pleasure?

Crème brûlée

What’s your favorite flavor combination?

I love cooking with garlic, onions, and various fresh herbs. I find that these ingredients work well with many if not all cuisines.

Besides your restaurant, where do you go out to eat?

When I'm not working I travel a lot. I enjoy visiting St. Augustine, Tampa, Orlando and Atlanta. I'll seek out new places to try. I especially like food trucks. Food trucks are the new incubators of culinary innovation.

What are your pet peeves in the kitchen?

Timeliness and Cleanliness.

Shepherd's Pie
